I wish I could take back all the times that I avoided fennel, just because I didn't know what to do with it- i'm sorry, okay!? Fennel is such a versatile vegetable; shave the bulb and use it in a salad, or roast it with a symphony of other vegetables. The stalks can be used like you would celery in a stock and the fronds are a great herb for your omlette or as a unique garnish.
